You can, of course, go to a local Mexican restaurant if you prefer to keep things simple. One excellent Mexican meal to try is Frijoles Charros or beans stew. This pinto bean stew takes a long time to make because it's best served after several hours of slow cooking. Although the name suggests that this dish solely comprises beans, it also includes roasted tomatoes, garlic, bacon, and chiles.
